Capiz State University Sigma Satellite College’s Mila Olisco and Ella Mae Ata-al showcased their culinary skills and captured the palate of guests from all over the Philippines as they prepared our very own “ibos with lasaw”.
Olisco and Ata-al were among the invitees to showcase Capisnon heritage food at the Regional Travel Fair organized by the Capiz Provincial Government through the Provincial Tourism and Cultural Office. It was held at Robinson’s Place Roxas City on October 19-20, 2024.
Ibos is a Capisnon heritage delicacy commonly prepared using glutinous rice wrapped in coconut leaves and steamed until cooked. The rice is sometimes mixed with coconut milk for added flavor. The leaves impart a subtle aroma and make the dish portable and convenient to eat.
Its sauce, called lasaw, is made from coconut milk and sugar, and cooked until it thickens slightly and becomes syrupy. When served together, ibos is dipped into the lasaw to add sweetness and creaminess to the otherwise plain sticky rice. This leaves a balance of flavors and textures.
